How we choose our coffee beans

Every few months we cup a table of new coffees. Most of them are good. Only a few make it into the grinder. Here is what we look for.
Freshness first
We buy small and often, and we brew within three weeks of roasting. You can taste the difference in the crema.
Balance in milk and without
Most of our drinks have milk in them, so a coffee has to taste like itself in a flat white as well as in an espresso.
A fair price for the farm
We work with roasters who can tell us where the coffee came from and what the farm was paid for it.
